Ricardo Monfil Victoria
Green Apple, Grapefruit, Sweet Vermouth and Zest
Ricardo has around two hectares of land under coffee which makes him bigger than the typical producer in the Mazateca who would have less than one hectare and production of less than 100kg of parchment each year. These low yields are the primary challenge facing producers across Oaxaca and nowhere more so than the Mazateca. By working with single producers like Ricardo alongside small, community-based associations, Raw Material aim to open up access to the speciality market for producers in the Mazateca

Full Court Press describes a defensive tactic used in basketball. It’s a no-compromise, all-out approach. This ties into how we approach the quality of coffee we serve and the service we give. No compromise.
For us honesty is key. We aim to be both clear and transparent about the drinks we serve and the way we serve them. With every cup, we highlight the unique flavours that showcase not only the terroir but the effect of every step along the production chain, from picking to brewing. It is through this open attitude that we feel we can best highlight the work of everyone involved in coffee production.
